Peach & Blueberry Cobbler

This is a healthier version of the traditional cobbler. You can substitute other fruits for the peaches and blueberries.

Peach & Blueberry Cobbler

Baking time: 50 minutes

Serves 6


Ingredients


  • 1/4 cup unbleached flour

  • 1/4 cup whole-wheat flour

  • 1/4 cup organic raw sugar

  • 3/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup organic whole milk

  • 2 tablespoon unsalted butter, melted

  • 1 tablespoon extra virgin olive oil

  • 1/2 teaspoon vanilla extract

  • 2-3 fresh peaches, pitted and sliced into eighths

  • 1 cup fresh or frozen blueberries


Method:


  • Preheat oven to 350° F (175 C).

  • Lightly grease an 8-inch cast-iron skillet or baking dish and place it in the oven to warm up.

  • Whisk together flour, sugar, baking powder and salt in a large bowl. Add milk, butter, oil and vanilla and stir to combine.

  • Pour batter into the hot pan. Place peaches and blueberries evenly over the batter and bake until browned, about 50 minutes.

  • Let cool on a wire rack for 15 minutes. Serve warm.
