Peach & Blueberry Cobbler
This is a healthier version of the traditional cobbler. You can substitute other fruits for the peaches and blueberries.

Serves 6
Ingredients
1/4 cup unbleached flour
1/4 cup whole-wheat flour
1/4 cup organic raw sugar
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup organic whole milk
2 tablespoon unsalted butter, melted
1 tablespoon extra virgin olive oil
1/2 teaspoon vanilla extract
2-3 fresh peaches, pitted and sliced into eighths
1 cup fresh or frozen blueberries
Method:
Preheat oven to 350° F (175 C).
Lightly grease an 8-inch cast-iron skillet or baking dish and place it in the oven to warm up.
Whisk together flour, sugar, baking powder and salt in a large bowl. Add milk, butter, oil and vanilla and stir to combine.
Pour batter into the hot pan. Place peaches and blueberries evenly over the batter and bake until browned, about 50 minutes.
Let cool on a wire rack for 15 minutes. Serve warm.
