No Bake Flourless Brownies

Quick and easy to prepare and a sure winner for young and old. Made with walnuts and dates - it is a healthy treat. No baking required. 

No Bake Flourless Brownies

Preparation: 15 minutes

Makes about 16 pieces


Ingredients:


  • 2 cups walnuts

  • 1 cup organic raw cacao powder

  • 2 tablespoons flax seeds, ground

  • 2 teaspoons cinnamon

  • ½ teaspoon sea salt

  • 2 ½ cups dates, pitted


Topping:


  • ¼ cup unrefined virgin coconut oil, melted

  • 2 tablespoons organic maple syrup

  • ¼ cup organic raw cacao powder

  • ½ teaspoon sea salt


Method:


  • If you are using whole flax seeds, ground them in a grinder (I use a small coffee grinder). Alternatively, you can use flax seed meal.

  • Add the walnuts, cacao powder, ground flax seeds, cinnamon and salt to a food processor and pulse until fine.

  • Add the pitted dates (if they are quite dry, soak them in hot water for about 15 minutes first) and pulse until combined.

  • Line a small container with parchment paper and press the mixture into it.

  • In a small bowl, mix together all the topping ingredients and pour over the brownie mixture.

  • Put in the freezer for 5 – 10 minutes to set.

  • Take out and cut into squares.
