Creamy Broccoli Soup

Nutritious and yummy - perfect combination.

Ingredients:


  • 3 heads of broccoli

  • 6 cups of water

  • 1 whole fennel, diced

  • 1 vegetable bouillon cube

  • Handful of fresh parsley, coriander or sage leaves

  • Salt & freshly ground pepper, to taste

  • 1 cup of fresh sprouts (optional)


Method:


  • Add the chopped broccoli to boiling water and simmer for about 5 minutes.

  • Stir in the fennel, bouillon cube, herbs, salt & pepper.

  • Pour in a blender and blend.

  • Sprinkle over the sprouts and serve.
