Veggie Patties
These veggie patties are full of flavors - serve on a bed of lettuce or in a wholemeal bun.
Preparation: 15 minutes
Cooking time: 30 minutes
Serves: 8
Ingredients:
1 can beans (like black beans, kidney beans, chickpeas, pinto beans, cannellini….)
1 cup carrots, grated
1 onion, finely chopped
3 eggs, beaten
¼ cup organic Greek yogurt (check sugar content!)
1 teaspoon ground cumin
2 cups organic quick cooking oats
½ cup fresh herbs (like basil, mint, parsley, thyme, dill, coriander….)
A couple of pinches of cayenne pepper (optional)
Method:
Pre-heat oven to 200 C / 400 F.
Drain and mash up the beans.
Mix in the other ingredients and form 8 patties.
Bake in the oven for 30 minutes or until lightly browned.
