Tomato and garlic linguine
This is a very simple recipe that is quick to prepare and never fails to taste delicious.
Preparation: 10 minutes
Cooking: 15 minutes
Serves: 4
Ingredients:
400 g whole wheat linguine
1 large onion, sliced
1 tablespoon virgin olive oil
6 cloves garlic, sliced
4 large ripe tomatoes, diced
Salt & pepper to taste
handful of basil
Method:
Cook the linguine al dente - according to packet instructions.
In a large frypan, fry the onions for a couple of minutes in olive oil until soft, then add the garlic and fry for another minute.
Add the tomatoes to the onion and garlic mix, bring to a boil and then turn down the heat and let it simmer for about 10 minutes. (You can also use canned tomatoes if you don't have fresh ones)
Once the linguine is cooked, add it to the frypan with the tomato sauce, stir, season to taste and add the basil.
