Omelet with Tomatoes, Peppers & Cheese

Preparation: 5 minutes
Cooking: couple of minutes
Serves: 1
Ingredients:
2 organic eggs
½ tomato, diced
¼ cup diced capsicum (bell peppers), diced
Little bit of red onions - diced
2 tablespoons shredded whole milk mozzarella
1 teaspoon organic butter
Method:
Heat butter in a frypan
Scramble the eggs and add to the hot frypan
Top with the tomatoes, capsicum, onions and mozzarella
Cook until set
