Oat, Coconut & Chia Seed Cookies
This recipe is so quick and easy to prepare - it doesn't even require baking! Much better for you than store bought cookies - you know exactly what's in them!
Preparation: 15 minutes
Makes: 22 cookies
Ingredients:
2 1/2 cups old fashioned organic oats
1 cup organic flaked coconut (unsweetened)
1/2 cup honey
1/2 cup organic virgin coconut oil (cold pressed & unrefined)
1/2 cup almond butter
2 tablespoon chia seeds
1 teaspoon vanilla extract
3 tablespoon organic raw cacao powder
Method:
Mix the oats and coconut flakes in a bowl.
In a saucepan heat the honey, coconut oil and almond butter and stir until the mixture is melted.
Remove from heat and mix in the oats and coconut flakes.
Add the chia seeds, vanilla extract and cocoa powder and continue stirring until mixture thickens.
Put tablespoons of the mixture onto a baking tray covered with parchment paper. This should make about 22 cookies.
Place into the freezer for at least 1 hour.
Keep in a sealed container in the freezer until needed.
