Oat, Coconut & Chia Seed Cookies

This recipe is so quick and easy to prepare - it doesn't even require baking! Much better for you than store bought cookies - you know exactly what's in them!

Oat, Coconut & Chia Seed Cookies

Preparation: 15 minutes

Makes: 22 cookies


Ingredients:


  • 2 1/2 cups old fashioned organic oats

  • 1 cup organic flaked coconut (unsweetened)

  • 1/2 cup honey

  • 1/2 cup organic virgin coconut oil (cold pressed & unrefined)

  • 1/2 cup almond butter

  • 2 tablespoon chia seeds

  • 1 teaspoon vanilla extract

  • 3 tablespoon organic raw cacao powder


Method:


  • Mix the oats and coconut flakes in a bowl.

  • In a saucepan heat the honey, coconut oil and almond butter and stir until the mixture is melted.

  • Remove from heat and mix in the oats and coconut flakes.

  • Add the chia seeds, vanilla extract and cocoa powder and continue stirring until mixture thickens.

  • Put tablespoons of the mixture onto a baking tray covered with parchment paper. This should make about 22 cookies.

  • Place into the freezer for at least 1 hour.

  • Keep in a sealed container in the freezer until needed.
