Quick and easy to make. It keeps for a couple of days or you can freeze it.
Preparation: 10 minutes
Cooking time: 60 minutes
3-4 small ripe bananas
50 g organic butter, unsalted
2 tablespoon organic plain yogurt (check that the sugar content is not higher the 7 g)
1 organic egg
1 ½ cup almond meal
3 tablespoon organic unbleached flour
1 ½ tsp baking powder
1 teaspoon bicarbonate of soda
2 tablespoon organic unsweetened finely shredded coconut
2 teaspoon honey
Mash the bananas in a big bowl.
Melt the butter and add to the mashed bananas.
Add all the other ingredients and mix with a spoon to combine.
Fill the mixture into a lightly oiled cake tin
Bake at 330 F (165 C) for about 60 minutes or until a skewer inserted comes out clean.
