
Hot coss buns
Perfect Easter treats. This recipe is made with wholemeal flour.

Preparation: 15 minutes
Baking: 20 minutes
Makes 10 buns
Ingredients:
For the buns:
250g wholemeal flour
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup raisins
1/2 cup organic milk
3 tablespoon maple syrup
2 1/2 tablespoons organic unrefined virgin coconut oil, melted
1 organic egg
1 tablespoon lemon juice
1 teaspoon vanilla extract
Zest of half 1 small orange
1 additional egg, whisked - to brush the buns.
For the cross:
4 tablespoons of white unrefined flour
water
Method:
Preheat the oven to 180 C (355 F).
Mix the dry ingredients and raisins together in a large bowl.
Mix all the other ingredients together in another bowl.
Combine both mixtures and fold through until just combined.
Dust a clean surface with flour and turn the dough out onto it.
Divide the dough into 10 pieces and form into round buns.
Place the buns on a baking tray lined with baking paper.
Brush the top of the buns with the additional egg.
For the cross, mix the flour with just enough water to make a thick paste. Spoon the paste into a piping bag with a small nozzle and pipe a cross on the buns.
Bake for 20 minutes or until golden brown.
