Crumbed zucchini

This is a much healthier alternative to regular fries. A great way to add some vegetables to your diet. Even the kids love this dish.

Crumbed zucchini

Serves: 4


Ingredients:


  • 4 small zucchini (courgettes)

  • 1/4 cup bread crumbs

  • 1/4 cup grated parmesan

  • 1 egg

  • Sea salt

  • Freshly ground pepper


Method:


  • Preheat the oven to 200 C (400 F) and line a baking tray with baking paper.

  • In a bowl mix together the bread crumbs, parmesan, salt and pepper.

  • In a separate bowl beat the egg.

  • Cut the zucchini into strips and dip each strip into the egg and then the bread crumb mix.

  • Arrange on the prepared baking tray and bake for about 15 minutes, or until golden.


Notes: Tastes great with a cucumber raita dip on the side
