This is a much healthier alternative to regular fries. A great way to add some vegetables to your diet. Even the kids love this dish.

4 small zucchini (courgettes)
1/4 cup bread crumbs
1/4 cup grated parmesan
Freshly ground pepper
Preheat the oven to 200 C (400 F) and line a baking tray with baking paper.
In a bowl mix together the bread crumbs, parmesan, salt and pepper.
In a separate bowl beat the egg.
Cut the zucchini into strips and dip each strip into the egg and then the bread crumb mix.
Arrange on the prepared baking tray and bake for about 15 minutes, or until golden.
Notes: Tastes great with a cucumber raita dip on the side
