Quinoa & Lentil Salad

Use this is a complete meal or as a side dish.

Quinoa & Lentil Salad

Preparation: 30 minutes

Serves: 6


Ingredients:


  • 1 cup quinoa

  • 1 cup  cooked lentils

  • 1 small red onion, chopped

  • 1 red pepper (capsicum), chopped

  • 1 medium cucumber, chopped

  • 100 grams feta cheese, chopped

  • bunch of parsley, chopped

  • 2 tbsp pumpkinseed oil or virgin olive oil

  • Juice of 1 lemon

  • Salt & pepper to taste


Method:


  • Rinse quinoa and cook as per instructions. Let cool.

  • Mix all the other ingredients together with the cooled quinoa.

  • Season with the oil, lemon juice and salt & pepper.
