Carrot, apple and celery salad
The combination of carrots, apple, celery and the sweetness of raisins and manuka honey makes this salad a fabulous addition to any meal.
Preparation: 10 minutes
Serves: 4
Ingredients:
1 1⁄2 cups shredded carrots
1 chopped apple
1⁄4 cup chopped celery
5 tablespoons organic raisins
1 tablespoon freshly squeezed lemon juice
1⁄2 cup organic low-fat unsweetened greek yogurt (or non-dairy yogurt)
1 teaspoon manuka honey
Method:
Combine the carrots, apple, celery, raisins, and lemon juice in a bowl.
In a small bowl mix together the yogurt and honey.
Add the yogurt dressing to the carrot mixture and mix well.
