Arugula, Cherry Tomatoes & Mozzarella
Fantastic salad - also tastes nice if you change the mozzarella to shaved parmesan
Preparation: 10 minutes
2 cups arugula
1 cup cherry tomatoes
3 mozzarella balls (about 28 g)
1 tablespoon extra-virgin olive oil
1 tablespoon balsamic vinegar
Sea salt & pepper
Rinse arugula and cherry tomatoes.
Cut 3 mozzarella balls into quarters.
Toss everything with the oil and vinegar and season with salt and pepper to taste.
