Arugula, Cherry Tomatoes & Mozzarella

Fantastic salad - also tastes nice if you change the mozzarella to shaved parmesan

Ingredients:


  • 2 cups arugula

  • 1 cup cherry tomatoes

  • 3 mozzarella balls (about 28 g)

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon balsamic vinegar

  • Sea salt & pepper


Method:


  • Rinse arugula and cherry tomatoes.

  • Cut 3 mozzarella balls into quarters.

  • Toss everything with the oil and vinegar and season with salt and pepper to taste.
