Salads

Chickpea & halloumi
Chickpeas are high in protein and a great substitute for meat dishes. They are a rich source of vitamins, minerals and fiber.

Roasted pumpkin and arugula salad
This is a great salad for get-togethers - it looks and tastes amazing.

Anita's favourite salad
This is my absolute favourite salad - I make it most days. The pumpkin seed oil makes this dish extra special.

Baby Kale Salad with Pomegranate and Pecans
Pomegranates are very high in antioxidants. They support your immune system, lower cholesterol and blood pressure and have anti-cancer properties.

Couscous Salad
One of my favorite dishes - and a good way to use up left-over couscous from the night before.

Cabbage salad
Cabbage is a cruciferous vegetable said to prevent cancer, lower the risk of heart disease and help protect against radiation.

Caprese and quinoa salad
Quinoa is gluten free, rich in protein, fiber, vitamins and minerals. Adding mozzarella and cherry tomatoes makes for a perfect Italian-style salad.

Arugula, Cherry Tomatoes & Mozzarella
Fantastic salad - also tastes nice if you change the mozzarella to shaved parmesan

Buckwheat salad
Despite it's name, buckwheat is not a wheat and is gluten free. It is a seed of a plant grown in Asia and is high in proteins, fiber, minerals and antioxidants.

Carrot, apple and celery salad
The combination of carrots, apple, celery and the sweetness of raisins and manuka honey makes this salad a fabulous addition to any meal.

Quinoa Salad
Colorful salad that is super healthy and tastes great as well. You can pretty much add any vegetables that you have to it.

Greek Salad
Love the mint flavor in this salad! I also love garlic - so I add a couple extra cloves to this recipe.
