Quinoa Salad

Preparation: 25 minutes

Serves: 4

 

Ingredients:

 

½ cup of tricolor quinoa

1 red pepper, chopped

1 small red onion, chopped

3 or 4 spring onions

1 carrot, chopped

1 cucumber, chopped

¼  red cabbage, chopped

1 lemon, juice

Salt & freshly ground pepper to taste

 

Method:

 

  • Rinse quinoa thoroughly.

  • Cook the quinoa as per packet instructions. Let cool.

  • Add all the other ingredients and mix.
