Quinoa & Lentil Salad

Preparation: 30 minutes

Serves: 6

 

Ingredients:

 

1 cup quinoa

1 cup  cooked lentils 

1 small red onion, chopped

1 red pepper (capsicum), chopped

1 medium cucumber, chopped

100 grams feta cheese, chopped

bunch of parsley, chopped

2 tbsp pumpkinseed oil or virgin olive oil

Juice of 1 lemon

Salt & pepper to taste

 

Method:

 

Rinse quinoa and cook as per instructions. Let cool.

Mix all the other ingredients together with the cooled quinoa.

Season with the oil, lemon juice and salt & pepper.
