Udon noodle & veg stir-fry
Love this simple stir-fry. Instead of using capsicum like in this recipe, you can use any veggies you have.

Cooking: about 10-15 minutes
Serves: 3- 4
270 g organic Udon noodles
1 tablespoon virgin olive oil
1 large onion, sliced
4 cloves garlic, sliced
4 capsicums (1 each - red, yellow, green and orange), sliced
1/4 cauliflower, cut into strips
about 3 tablespoons of tamari sauce
about 2 tablespoons of sweet chilli sauce
Cook the udon noodles according to instructions on the packet (about 8 minutes). Then drain and rinse under cold water.
While the noodles are cooking, fry the onions in the olive oil for a couple of minutes until soft, then add the garlic and fry for another minute.
Add the capsicums and cauliflower to the onion and garlic and fry for another 5-8 minutes.
Add the tamari sauce and sweet chilli sauce and mix well.
Toss the cooked udon noodles with the capsicum mix and serve.
