Udon noodle & veg stir-fry

Love this simple stir-fry. Instead of using capsicum like in this recipe, you can use any veggies you have. 

Udon noodle & veg stir-fry

Preparation: 10 -15 minutes

Cooking: about 10-15 minutes

Serves: 3- 4


  • 270 g organic Udon noodles

  • 1 tablespoon virgin olive oil

  • 1 large onion, sliced

  • 4 cloves garlic, sliced

  • 4 capsicums (1 each - red, yellow, green and orange), sliced

  • 1/4 cauliflower, cut into strips

  • about 3 tablespoons of tamari sauce

  • about 2 tablespoons of sweet chilli sauce


  • Cook the udon noodles according to instructions on the packet (about 8 minutes). Then drain and rinse under cold water.

  • While the noodles are cooking, fry the onions in the olive oil for a couple of minutes until soft, then add the garlic and fry for another minute.

  • Add the capsicums and cauliflower to the onion and garlic and fry for another 5-8 minutes.

  • Add the tamari sauce and sweet chilli sauce and mix well.

  • Toss the cooked udon noodles with the capsicum mix and serve.
