Tofu Burger
Tofu is a great source of protein and contains all nine essential amino acids. It is a good plant source of iron and calcium as well as manganese and phosphorous. In addition to this, it also contains magnesium, copper, zinc and vitamin B1.

Serves: 4
Ingredients:
300 g organic firm tofu
1 large organic egg
70 g wholemeal breadcrumbs
2 teaspoons Vegemite
2 teaspoons organic cold pressed virgin olive oil
4 wholemeal buns
couple of slices of organic cheese
Lettuce leaves
Tomatoes, sliced
Red onions, sliced
Method:
Wrap the tofu in a clean tea towel, then squeeze and wring it out to remove the excess liquid.
Place the tofu in a bowl, add the egg, the breadcrumbs and vegemite. Mix together with your hands, then shape into 4 even-sized patties.
Heat the olive oil in a large frying pan on medium heat and cook the patties for about 3 minutes on each side until golden.
If you want to heat up your buns, put them into a warm oven for a few minutes.
Slice the cheese, place on the cooked patties, reduce the heat to low, then cover and leave to melt for 3 to 4 minutes.
Arrange some salad leaves, tomatoe slices, onions (or any other veggies you like) on the buns, top with the patties and enjoy!
