Quinoa & Bean Patties
Those patties are simply delicious! Very light and tasty - this is one of my favorite dishes.
Preparation: 15 minutes
Cooking: 10 minutes
Serves: 4
Ingredients:
3 tblsp extra virgin olive oil
1 small red pepper (capsicum), diced
3 cloves garlic, diced
1 small red onions, diced
1 can organic black beans, drained
½ cup fresh cilantro (coriander)
3 cups quinoa (cooked)
2 organic eggs, beaten
1 cup organic bread crumbs (plus a bit extra for coating)
1 tsp mixed dried or fresh herbs
Dash of cayenne pepper (optional)
Salt & freshly ground black pepper to taste
Method:
Sauté the red pepper in 1 tablespoon of olive oil for about 3 minutes. Add the onions and garlic and sauté until soft. Let cool slightly.
Put the drained and rinsed black beans, cilantro and the red pepper/onion/garlic mix into a food processor and blend.
Combine the bean mix with all the other ingredients and form patties (this should make about 8 patties). Coat in bread crumbs.
Fry the patties in 2 tablespoons of olive oil over medium heat for a couple of minutes on each side.
