Quinoa & Bean Patties

Those patties are simply delicious! Very light and tasty - this is one of my favorite dishes.

Preparation: 15 minutes

Cooking: 10 minutes

Serves: 4

Ingredients:

  • 3 tblsp extra virgin olive oil

  • 1 small red pepper (capsicum), diced

  • 3 cloves garlic, diced

  • 1 small red onions, diced

  • 1 can organic black beans, drained

  • ½ cup fresh cilantro (coriander)

  • 3 cups quinoa (cooked)

  • 2 organic eggs, beaten

  • 1 cup organic bread crumbs (plus a bit extra for coating)

  • 1 tsp mixed dried or fresh herbs

  • Dash of cayenne pepper (optional)

  • Salt & freshly ground black pepper to taste

Method:

  • Sauté the red pepper in 1 tablespoon of olive oil for about 3 minutes. Add the onions and garlic and sauté until soft. Let cool slightly.

  • Put the drained and rinsed black beans, cilantro and the red pepper/onion/garlic mix into a food processor and blend.

  • Combine the bean mix with all the other ingredients and form patties (this should make about 8 patties).  Coat in bread crumbs.

  • Fry the patties in 2 tablespoons of olive oil over medium heat for a couple of minutes on each side.
