Pumpkin & Sweet Potato Fritters
Another fantastic vegan dish. This one is gluten-free as well. One of my personal favourites. Quick and easy to make.
Preparation: 15 minutes
Cooking: 8-10 minutes
Serves: 4
Ingredients:
1 1/2 cup sweet potato, grated
1 cup pumpkin, grated
2 spring onions, chopped
1 cup parsley, chopped
1 cup gluten free flour
1 teaspoon turmeric
1 teaspoon chayenne pepper
Salt & pepper
2 tablespoons organic cold pressed coconut oil
Method:
Mix everything together with your hands, massaging the flour into the veggies.
Form and press into patties with your hands.
Heat the coconut oil on medium and fry the patties for 4-5 minutes on each side.
Serve with a salad.
