Pumpkin & Sweet Potato Fritters

Another fantastic vegan dish. This one is gluten-free as well. One of my personal favourites. Quick and easy to make.

Pumpkin & Sweet Potato Fritters

Preparation: 15 minutes

Cooking: 8-10 minutes

Serves: 4


Ingredients:


  • 1 1/2 cup sweet potato, grated

  • 1 cup pumpkin, grated

  • 2 spring onions, chopped

  • 1 cup parsley, chopped

  • 1 cup gluten free flour

  • 1 teaspoon turmeric

  • 1 teaspoon chayenne pepper

  • Salt & pepper

  • 2 tablespoons organic cold pressed coconut oil


Method:


  • Mix everything together with your hands, massaging the flour into the veggies.

  • Form and press into patties with your hands.

  • Heat the coconut oil on medium and fry the patties for 4-5 minutes on each side.


Serve with a salad.
