Potato, herbs and caramelized onion mash
This is a great vegan dish - perfect for sharing and it will go down well at any dinner party.
Preparation: 20 minutes
Cooking: 30 minutes
Serves: 4-6
Ingredients:
6 potatos, boiled
3 onions, sliced
1 tablespoon olive oil
splash of vinegar
1 cup of peas (fresh or frozen)
1 tablespoon capers
2-3 gloves garlic
1 cup parsley
1 cup coriander
handful of mint
100 g feta cheese, chopped
more olive oil to drizzle over
Method:
Boil the potatoes with skin on (about 25-30 min).
When you start boiling the potatoes, start cooking the onions in the olive oil over low heat at the same time - also for about 30 minutes - until they are nicely browned. Towards the end, add a splash of vinegar to the onions.
While the potatos and onions are cooking, finely chop the capers, garlic, parsley, coriander and mint all together. Feel free to use other herbs as well.
Drop the peas into the boiling potato water a minute before the potatoes are done. Then drain them all together and put on a big platter or chopping board and roughly mash them up.
Distribute the herb mix, feta cheese and the onions over the potato mash.
Sprinkle with sea salt, pepper and drizzle a bit of olive oil over it all.
