Nut Burger
Much healthier option to a meat burger - the kids (and grown ups) will love it!
Preparation: 15 minutes
Cooking time: about 5 minutes
Makes 4 burgers
Ingredients:
1/3 cup almonds
1/3 cup walnuts
1 small onion, diced
Big handful of fresh coriander
2 tablespoons tahini
1 large carrot, grated
1 teaspoon ground cumin
Pink Himalayan salt
Freshly ground black pepper
1 tablespoon organic virgin coconut oil
Method:
Blend the nuts, onion, coriander and tahini in a food processor
Add the grated carrot and cumin
Season with salt and pepper and form into patties (if the mixture is too dry, add some more tahini)
Grill or fry in a little coconut oil until browned
Serve in a wholegrain bun with home-made chips or simply on a bed of salad.
