Marinated Ahi Tuna with Bulgur Wheat Salad

This is one of my favorite dishes - the tuna melts in your mouth and the bulgur wheat salad is full of flavor.

Marinated Ahi Tuna with Bulgur Wheat Salad

Preparation: 15 minutes

Cooking: 1-2 minutes

Serves: 6


Ingredients:


  • 6 small ahi tuna steaks

  • 2 tablespoons soy sauce

  • 2 cloves garlic, crushed

  • 1 teaspoon honey


Bulgur Wheat Salad:


  • 1 cup dry bulgur wheat

  • 1 red onion, diced

  • 1 red capsicum (pepper), diced

  • 6 radishes, diced

  • 1 can Canellini beans, drained and washed

  • Bunch of coriander, roughly chopped

  • 1 tablespoon extra virgin olive oil

  • ½ lemon, juiced

  • 1 teaspoon ground cumin

  • Sea salt & freshly ground black pepper


Method:


  • Cut the tuna steaks into small chunks and marinate with the soy sauce, garlic and honey. Set aside and rest for a couple of hours.

  • Pour 1 ½ cups of boiling water over the bulgur wheat, cover with a lid and leave until all the water is absorbed (about ½ hour).

  • Add the onion, capsicum, beans and coriander to the bulgur wheat and season with olive oil, lemon juice, cumin, salt & pepper. Mix until combined. (Alternatively, you can also use cucumbers, tomatoes, chickpeas, parsley, mint etc.)

  • Cook the tuna on the BBQ over high heat for about 1-2 minutes. Tuna should be seared, but still slightly raw inside.
