Marinated Ahi Tuna with Bulgur Wheat Salad
This is one of my favorite dishes - the tuna melts in your mouth and the bulgur wheat salad is full of flavor.
Preparation: 15 minutes
Cooking: 1-2 minutes
Serves: 6
Ingredients:
6 small ahi tuna steaks
2 tablespoons soy sauce
2 cloves garlic, crushed
1 teaspoon honey
Bulgur Wheat Salad:
1 cup dry bulgur wheat
1 red onion, diced
1 red capsicum (pepper), diced
6 radishes, diced
1 can Canellini beans, drained and washed
Bunch of coriander, roughly chopped
1 tablespoon extra virgin olive oil
½ lemon, juiced
1 teaspoon ground cumin
Sea salt & freshly ground black pepper
Method:
Cut the tuna steaks into small chunks and marinate with the soy sauce, garlic and honey. Set aside and rest for a couple of hours.
Pour 1 ½ cups of boiling water over the bulgur wheat, cover with a lid and leave until all the water is absorbed (about ½ hour).
Add the onion, capsicum, beans and coriander to the bulgur wheat and season with olive oil, lemon juice, cumin, salt & pepper. Mix until combined. (Alternatively, you can also use cucumbers, tomatoes, chickpeas, parsley, mint etc.)
Cook the tuna on the BBQ over high heat for about 1-2 minutes. Tuna should be seared, but still slightly raw inside.
