Home-made ravioli
Those are the most delicious ravioli! The dough is so easy to make and you can use whatever you want for the filling.
Preparation: about 1 hour
Makes about 30 ravioli
Ingredients for the dough:
1 1/2 cup organic stoneground flour
pinch of salt
2 eggs
water
Method:
Combine the flour and salt (you can just do it on your kitchen bench) and press a well in the middle. Add the eggs in the middle and use a folk to beat them and draw in the flour. Then, using your hands, form it to a dough - add a spoonful or two of water as you go to make it into a soft dough. Knead it for about 8-10 minutes, then roll it into a ball and cover it with an overturned bowl for about 30 minutes.
Cut the dough into 4 pieces and roll them out on a floured surface with a rolling pin. Use a cookie cutter to cut into shapes and fill it with your choice of filling. I used spinach, ricotta and garlic for mine.
Use a bit of egg wash or milk around the side of the fillings and then top it with another piece of dough and press it together.
Cook in boiling salted water for a few minutes. When the pasta floats to the top its ready.
