Cauliflower Fried Rice
A different take on fried rice - a vegan dish that uses cauliflower instead of rice. Could be a main course or a side dish.
Preparation: 15 minutes
Cooking: 10 minutes
Serves: 4 as main course (or 6-8 as side dish)
1 medium head of cauliflower
2 tablespoons extra virgin olive oil
1 medium onion, diced
3 garlic cloves, finely sliced
1 capsicum, diced
1 courgette (zucchini), diced
¼ cup soy sauce
handful cashew nuts
Cut the cauliflower into large chunks and pulse in a food processor until it resembles rice.
Heat oil in large frying pan over medium heat. Add the onion and cook for a couple of minutes, until softened.
Add garlic and cook for another minute.
Turn up the heat and add cauliflower, capsicum, courgette and soy sauce. Cook, stirring frequently for about 5 minutes.
Top with the cashew nuts
