Lemon sole & steamed veggies

Ingredients:

 

•2 Lemon sole fillet (or any other fresh fish fillets)

•1 tbsp organic extra virgin coconut oil

•Mixed herbs (fresh or dried)

•Little bit of flour for dusting

•Salt & freshly ground black pepper

•1 cup florets of broccoli

•1 cup carrots, cut

 

Method:

 

•Steam the broccoli and carrots.

•Combine a little dusting of flour with the herbs, salt & pepper – coat the fish fillets in it and pan-fry in the coconut oil for a couple of minutes.

•Serve on top of the steamed veggies
