1 avocado

½ lemon

½ red onion, finely diced

1 ripe tomato, finely diced

Fresh parsley, finely chopped


Freshly ground pepper

Pinch of cayenne pepper (optional)




  • Mash the avocado, squeeze the lemon over it.

  • Mix in the diced onions, tomato and parsley.

  • Season with salt & pepper to your taste.

  • Use cayenne pepper to give it a bit of a spicy kick if you like.

  • Serve with a variety of cut veggies (carrots, celery, cucumber, capsicums …)
