Creamy broccoli soup

Preparation: 5 minutes

Cooking: 10 minutes

Serves: 4




3 heads of broccoli

6 cups of water

1 whole fennel, diced

1 vegetable bouillon cube

Handful of fresh parsley, coriander or sage leaves

Salt & freshly ground pepper, to taste

1 cup of fresh sprouts (optional)




•Add the chopped broccoli to boiling water and simmer for about 7 minutes.

•Stir in the fennel, bouillon cube, herbs, salt & pepper.

•Pour in a blender and blend.

•Sprinkle over the sprouts and serve.
