Creamy Avocado & Vegetable Soup

1 tblsp extra virgin olive oil
1 onion, diced
3 cloves garlic, diced
2 carrots, diced
1 cup broccoli, diced
1 cup cauliflower, diced
4 cups organic vegetable stock
½ cup cilantro (coriander)
Salt & freshly ground pepper, to taste
Sauté the onion and garlic in the olive oil until soft.
Add the carrots, broccoli, cauliflower and vegetable stock and bring to a boil and simmer for about 20 minutes.
Pour into a food processor, add the avocado and cilantro and blend. Season with salt & pepper to your taste.
