Home-made ravioli

Preparation: about 1 hour

Makes about 30 ravioli 

 

Ingredients for the dough:

 

  • ​1 1/2 cup stoneground flour

  • pinch of salt

  • 2 eggs

  • water

Method:

  • Combine the flour and salt (you can just do it on your kitchen bench) and press a well in the middle. Add the eggs in the middle and use a folk to beat them and draw in the flour. Then, using your hands, form it to a dough - add a spoonful or two of water as you go to make it into a soft dough. Knead it for about 8-10 minutes, then roll it into a ball and cover it with an overturned bowl for about 30 minutes.

  • Cut the dough into 4 pieces and roll them out on a floured surface with a rolling pin. Use a cookie cutter to cut into shapes and fill it with your choice of filling. I used spinach, ricotta and garlic for mine.

  • Use a bit of egg wash or milk around the side of the fillings and then top it with another piece of dough and press it together.

  • Cook in boiling salted water for a few minutes. When the pasta floats to the top its ready.
