Nut Burger

Preparation: 15 minutes

Cooking time: about 5 minutes

Makes 4 burgers

 

Ingredients:

 

  • 1/3 cup almonds

  • 1/3 cup walnuts

  • 1 small onion, diced

  • Big handful of fresh coriander

  • 2 tablespoons tahini

  • 1 large carrot, grated

  • 1 teaspoon ground cumin

  • Pink Himalayan salt

  • Freshly ground black pepper

  • 1 tablespoon organic virgin coconut oil

Method:

 

  • Blend the nuts, onion, coriander and tahini in a food processor

  • Add the grated carrot and cumin

  • Season with salt and pepper and form into patties (if the mixture is too dry, add some more tahini)

  • Grill or fry in a little coconut oil until browned

  • Serve in a wholegrain bun with home-made chips or simply on a bed of salad.
