Tomato and garlic linguine

Preparation: 10 minutes

Cooking: 15 minutes

Serves: 4

 

Ingredients:

 

  • 400 g whole wheat linguine

  • 1 large onion, sliced

  • 1 tablespoon virgin olive oil

  • 6 cloves garlic, sliced

  • 4 large ripe tomatoes, diced

  • Salt & pepper to taste

  • handful of basil 

 

Method:

 

  • Cook the linguine al dente - according to packet instructions.

  • In a large frypan, fry the onions for a couple of minutes in olive oil until soft, then add the garlic and fry for another minute.

  • Add the tomatoes to the onion and garlic mix, bring to a boil and then turn down the heat and let it simmer for about 10 minutes. (You can also use canned tomatoes if you don't have fresh ones)

  • Once the linguine is cooked, add it to the frypan with the tomato sauce, stir, season to taste and add the basil.
