Vegan fat-free cookies

Preparation: 10 minutes

Baking: 10 minutes

Makes about 15-20 cookies

Ingredients: 

  • 1 teaspoon chia seeds

  • 2 tablespoons water

  • 1 cup organic oats (or my homemade muesli)

  • 1 cup organic wholewheat flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 cup raisins (unless you are using my homemade muesli)

  • 1/4 cup maple syrup

  • 1 orange, juiced

  • 1 teaspoon lemon juice

  • 4 squares 80% Lindt chocolate

Method:

  • Pre-heat the oven to 190 C (375 F)

  • Mix the chia seeds with the water and set aside to thicken (about 10 minutes)

  • Mix all the other ingredients (except the Lindt chocolate) together

  • Add the thickened chia seeds

  • Drop spoonfuls of the mix onto a baking sheet - flatten slightly

  • Bake for about 10 minutes or until slightly browned. Then take out to cool on a rack.

  • Melt the chocolate in a dish over boiling water and drizzle over the cooled cookies.
