Chicken Corn Tortillas
Preparation time: 10 minutes
Cooking time: nil (if purchase cooked chicken)
4 Organic whole wheat & corn flour tortilla
1 avocado, mashed
1 cooked organic chicken breast, meat shredded
Iceberg lettuce shredded
2 tomatoes, chopped
Couple of black olives
¼ cup corn kernels (frozen and defrosted)
½ cup mozarella cheese
Warm tortillas in the oven for a couple of minutes
Spread each warmed tortilla with avocado.
Top with some of the shredded chicken.
Top with lettuce, tomato, olives, corn and cheese.
Fold each tortilla and serve.
