Chia Seeds with Banana & Berries
Preparation: 5 minutes (+ leave overnight)
4 tblsp chia seeds
1 ¼ cup almond milk, unsweetened
2 small ripe bananas
½ tsp vanilla extract
Pinch of cinnamon
1 tblsp flaked coconut, unsweetened
1 tblsp slivered almonds, raw
Mash bananas in a bowl and stir in the chia seeds.
Whisk in the almond milk, vanilla and cinnamon.
Place in the fridge overnight (or for at least 4 hours).
Next morning, stir the pudding to smooth out any lumps. If it is too thick add some more almond milk, or if it is too runny, add more chia seeds.
Spoon into serving dishes or glasses and top with the flaked coconut, almonds and any berries you like.
