Carrot, apple and celery salad

Ingredients:

  • 1 1⁄2 cups shredded carrots

  • 1 chopped apple

  • 1⁄4 cup chopped celery

  • 5 tablespoons organic raisins

  • 1 tablespoon freshly squeezed lemon juice

  • 1⁄2 cup organic low-fat unsweetened greek yogurt (or non-dairy yogurt)

  • 1 teaspoon manuka honey

Method:

 

  • Combine the carrots, apple, celery, raisins, and lemon juice in a bowl.

  • In a small bowl mix together the yogurt and honey.

  • Add the yogurt dressing to the carrot mixture and mix well.
