Toasted Muesli
Healthy, delicious and nutritious homemade muesli for the whole family.

Serves: 15
Ingredients:
500 g organic old fashioned oats
4 tblsp ground flaxseed meal
3 tblsp whole flaxseeds
2 tblsp chia seeds
3 tblsp roasted & unsalted sunflower seeds
3 tblsp roasted & unsalted pumpkin seeds
¼ cup each of unsalted cashew nuts, walnut pieces and sliced natural almonds
3 tblsp organic coconut flakes
3 tblsp goji berries
4 tblsp organic cranberries
4 tblsp organic raisins
4 tblsp honey
2 tblsp organic virgin coconut oil (or olive oil)
Method
Pre-heat oven to 300 F (150 C)
Mix the oats, seeds, nuts and coconut flakes together.
Warm the honey with the coconut oil.
Add the warm honey mixture to the bowl and stir well to coat the dry ingredients.
Spoon the mixture onto a large baking tray and spread out.
Bake the ingredients until they are lighted browned on top, stirring occasionally.
Remove from oven and allow to cool.
Add the dried fruit and stir to combine.
Serve with milk and/or yogurt.
Store muesli in an airtight container for up to a month.
