Anita's favourite Salad

The pumpkinseed oil gives this salad a unique flavor - it's a very nutty, rich and healthy oil that comes from Styria, Austria - where I come from.

 

Preparation time: 10 minutes

Serves: 4

 

Ingredients:

 

  • 2 Persian cucumbers, diced

  • 2 tomatoes, diced

  • ½ red onion, diced

  • ½ yellow capsicum, diced

  • ½ red capsicum, diced

  • 1 avocado, diced

  • 6 radishes, diced

  • ¼ cup roasted, unsalted sunflower seeds

  • 4 cups mixed lettuce leaves (mixed baby greens)

  • 2 tblsp pumpkinseed oil or extra-virgin olive oil

  • 2 tblsp balsamic vinegar

  • Salt & pepper

 

Method:

 

Mix all the ingredients together and season with oil, vinegar, salt and pepper
